Menudo with Cheese



Serves 6
Difficulty: intermediate

Ingredients:

  • 1 kg pork tenderloin, cubed 
  • 2 medium potatoes, cubed 
  • 1 medium carrots, cubed 
  • 1 red bell pepper, diced 
  • 1 green bell pepper, diced 
  • 1 small can tomato sauce 
  • 1 small can liver spread 
  • 1 onion, chopped 
  • 2 garlic cloves, chopped 
  • 1 swirl of olive oil for frying


  • Garnish: (optional) 
  • raisins, pickles, garbanzos, sausage, parmesan cheese(grated) 

  •  Marinade: 
  • 2 bay leaves 
  • 1 cup 7UP 
  •  4 tablespoons soy sauce 
  • 2 tablespoons juice (2 pcs calamansi) 
  • ground black pepper

  •  Seasoning: (optional)
  • onion and garlic powder
  • tomato powder
  • cane sugar
  • lemon pepper 

Preparations:


1. Combine all marinade ingredients, add pork cubes and marinate.
2. Remove pork from the marinade after 30 minutes.
3. Sauté garlic and onion.
4. Add pork, simmer uncovered.
5. Add tomato sauce, liver spread, stirring occasionally.
6. Add potatoes, simmer covered.
6. Add carrots, peppers and flavor with seasonings if desired.
7. Garnish with raisins and grated cheese.
8. Serve hot with bread or rice.
